Aluminum heart shape cake pans are going to be the cheapest and most common. The unfortunate side effect of using aluminum is that it sticks like crazy. You’ll have to be diligent when greasing the pan to make sure that it comes out freely. Nonstick cake pans will still need a bit of fat to make sure that there’s zero sticking, but the problem is that when nonstick is scratched it becomes toxic. So what do you do when something does stick in your nonstick pan? A plastic spatula is the safest, and resist the temptation to use anything metal or you’ll risk scratching the pan. Silicone is great because it doesn’t stick and is easy to work with, but it’s a bit more expensive than the other two.
